Gyoza （ぎょざ） - Sweet Jesus, that stuff is amazing. Fried though. :/ Steamed grosses me out.

Ramen (noodles) - with the good ones you’ll understand why they slurp… you can’t help it!
Unagi don (eel with rice) - tastes a lot nicer than it sounds
Sushi/sashimi (no, not that kind you have back home though they look identical. It’s the real thing)

kara age- this is fried chicken covered in some different spices n stuff. kinda like your japanese KFC lol.
tempura- lightly battered prawns, squid, vegies, etc
