Ooh I ook this for my man all the time.
In spanish we call it Arroz con Leche.

      (Rice with milk)

First off you boil a water in a pan then when it begins to boil drop a stick of cinnamin in it then like 2 mins after to pour rice in the water. When the rice consumes most of the water then you add milk to it. Boil until rice is nice and soft. Make sure you don’t burn the bottom of pan! Then add sugar to your liking.

      Ta daaaaaaa!

      INGREDIENTS (Nutrition)
      1 cup uncooked white rice
      2 cups water
      3 eggs, beaten
      2 cups milk
      1/2 cup white sugar
      1 teaspoon vanilla extract
      1/2 teaspoon salt
      1/3 cup raisins
      1 pinch ground nutmeg

      DIRECTIONS
Place uncooked rice in a 3 quart saucepan, and add water. Bring to a boil. Reduce heat, and simmer for 25 to 30 minutes.
      Preheat oven to 325 degrees F (165 degrees C).
In a large bowl, combine beaten eggs, milk, sugar, vanilla extract, and salt. Mix well. Stir in rice and raisins. Pour into a 10×6x2 inch baking dish.
Bake uncovered for 30 minutes; stir pudding and sprinkle with nutmeg. Bake additional 30 minutes or until a knife inserted halfway between the edge and the center comes out clean.

I use cinnamon instead of nutmeg. If you want you can double the recipe. I always do.
I've found that if I spray the baking dish with Pam,it's much easier to wash later. I also like pouring some milk over the warm pudding and eating it that way. I have tried other ways to make it and none taste better than this to me. My mom always made it this way too. Good luck.

Both recipes posted are good. They work and are fine if you want to start from scratch. Oh yes, they are delicious too.

Rice pudding here has become a way to use left over rice in my kitchen.

Put 2 cups cooked rice in a microwave safe dish. (White or brown rice).
Stir in two cups milk, two large beaten eggs and 1/2 cup sugar, 2 Tablespoons butter, 1/2 teaspoon vanilla, 1/3 cup raisins and 1 1/2 teaspoons of cinnamon. You can add a little nutmeg and ginger if you want to. (1/2 teaspoon each).

I microwave this for 5 minutes on a medium high power setting. That”s usually #7 on most microwaves. If it needs more time to set up then I put it back in the microwave in 2 minute increments until done.

I was surprised how nice this is. Serve at room temperature with a little whipped cream.

My dad is fromt he Islands and used to eat alot of rice, so in our home, it was a way to use the left over rice.

You take left over rice in its pot and pour in milk until just covered. Heat it up over Medium High heat until the rice softens and is loose. Then add a little flour (I use a couple tablespoons of tapioca pudding instead) to thicken. Add 1/2 cup of sugar or more until its sweet enough for you. Make sure you’re still stirring….then add a handful of raisins or dried currants/cranberries. A couple of dashes of cinnamon and nutmeg can be added, along with a teaspoon or two of vanilla. When its nice and thick its done. Takes me a half hour tops..

I sometimes cook this for breakfast and my toddler eats it up.
