Are most U.S. Chinese food restaurants truly authentic Chinese cuisine?

I've read that most standard U.S. Chinese restaurants are FAR from "authentic" Chinese cuisine. I realize there are different provinces in China w/ particular cuisines, but most American Chinese restaurants offer so-called provincial dishes (e.g. "Hunan Chicken"- Hunan province).
There are MANY good answers here. I live in Dallas, Texas- anyone know of "authentic" Chinese restaurants in my area?

      I haven't been to China, but I've been to Hong Kong. Nothing I saw on any menu looked like what I've eaten in America.

      Hi David,

      David the former chef here, in North America most of the so called Chinese restaurants have adapted certain types and styles of food to the local market, if you go to a large city like New York, San Francisco and here in Canada, Toronto and Vancouver, you will find more traditional restaurants.

      Mostly as the blended communitys strive to cook for the non-chinese markets and then there own, Like Dim Sum it is all pretty well what is serve in Hong Kong and China, as most non-chinese are a bit intimidated to try it.

      I go to the BBQ restauants here in Toronto, and I have been to the Hunan, Cantonese, Shanghiese and Monoglian places here to. All a bit different, if your looking for a more authentic style you may need to experience it in the large centers were the ethnic diversity is bigger.

      American Chinese food is basically "American Chinese".
      Except "Dim sum" which originates from Hongkong.

      There are very few authentic any cuisine restaurants in the U S. Italian, Mexican or Chinese. There is a great Thai restaurant in Ft. Walton FL that is aunthetic, tho.

      I have been to China, HK, Taiwan…

      the Chinese food there is very very different from what we eat as Chinese food here in the US. I am positive Chinese food here is "Americanized".

      The most authentic Chinese restaurants in the US are probably in Chinatowns, where the menus are not in English and nobody speaks any English! That's the best Chinese food!

      Some Chinese restaurants in the main Chinese populated areas with NYC, Chicago, San Francisco, LA, Seattle, etc. do offer truly "authentic" Chinese cuisines. However, most are "Fusion" Chinese food based on the modified cooking style of the original immigrants from the earlier railroad and gold mine labours from China who then modified the taste to suit Americans for business reasons and also due to the lack of traditional Chinese herbs and spices then.

      You can get the best "authentic" Chinese food in SF. Or better still, visit Toronto or Vancouver in Canada. There are many truly "authentic" Chinese restaurants in the heavy Chinese populated areas there (If you do not want to travel all the way to Asia).

      By the way, Dim Sum is truly Chinese food cooking style from ancient Chinese and not invented in Hong Kong as one of the answer had suggested. People of Hong Kong have added many newer items, but the "Dim Sum" style of cooking was originally used in the royal palace to please the emperors and the royalties. "Dim Sum" means small bites which touches the heart (snack size food).
      The common styles of Chinese cuisine are southern style (Cantonese style from the province of Canton now called Guandong which Hong Kong used to be a part of before the British colonial days) and the Northern Style mainly Shanghai style and Peking (Beijing) style. You can also find Seichuan style, Hunan Style, ChiuChau and Fukin style and the Taiwanese style.

      Chinese restaurants really are Americanized. they do not eat the way that they cook for us. The food we eat at their restaurants is very fattening and high in cholesteral.They would all be fat and dying from heart attacks at young ages. Hmmm… that sounds like us americans.I wonder why? Maybe because were eating too much chinese food.lol. They eat alot of steamed rice and vegetables and fish and such. They have a very healthy diet.

      most of dishes are Chinese cuisine as long as they were made by Chinese. Even in China, I believe there are more than 100 ways to cook this kongpao chicken. But i have to say that you can't find most of the dishes that you ordered in US in China, cause they are no long popular.

      For example, we usually don't order Kong Pao Chicken here anymore , some young Chinese may not know about this dishes.
