I usually fill mine about 3/4 full …… Then, when it's hot from the oven, I put on a glaze: 1/2 c. powdered sugar, adding brandy (or orange juice) 1 TB at a time, whisking until smooth. It dries to a clear, shiny finish, and just adds a little "zip" to the banana bread. I also substitute sour cream for any milk called for in the recipe…….

If the recipe doesn't tell you, and there is no glaze or icing going on top, fill it 2/3 of the way.
