He refuses to use any other oil to make his subjee(vegetables with indian spices) I use olive oil for my cooking (american) but I need to know if corn oil is healthy or very unhealthy?

Corn oil is not very healthy. If you could get him to switch to canola oil that might work better. While olive oil is best, it doesn't always lend the right flavor to whatever you are cooking. In which cases it is best to substitute canola, which is a fairly healthy cooking oil.

I'm Indian, and canola oil is relatively healthy and tastes absolutely fine when you're making sabzi. That being said, I wouldn't recommend olive oil for Indian food.

Healthy is a Judgmental Word.
I use peanut oil..
Because Olive oil smells moldy to me…
No one can tell you..
But
Yes !!!
By the manufactures Nutritional Facts It is Fine and IN most cases Kosher..

Corn oil is a veg oil and while it is not a bad oil, it does impart a certain flavour, but in India it along with peanut, cottonseed, palm and coconut oil are very popular, I ama former chef and use a neutral oil for my vegetarian cooking, I like peanut oil for Asian food along with sesame oil for finishing.
It is not as unhealthy as the others make it out to be, look at the label, check the nutritional info, as for olive oil while it has a bit less saturated fat it is really a matter of choice, I do not use any for cooking, I like olive oil for salads and for appetizers, but that is my personal preference, do not worry about the calories or fat, it is a veg oil, only animal fats are the ones to worry about.
