Breakfast Casserole recipe with fruit?

September 8th, 2008 · 1 Comment

I recently had a breakfast casserole at a pot-luck breakfast.
It had blueberries, pieces of strawberry and slices of banana (or maybe it was plantain) on top. There was a cream cheese layer under the fruit.
I was going to try to adapt a normal sort of breakfast casserole recipe, but if anyone knows an existing recipe it would save me a possible failed experiment.

thanks

I forgot to mention that it didn't have the usual sausage and cheese. It was just the egg/bread base and then the fruit and cream cheese was on the top.
The stuff on top was definitely cooked some but maybe not as long as the whole thing.

The result was sort of like a giant danish pastry, just eggs instead of pastry and not overly sweet.

I’ve made this and it was wonderful. I see no reason you could not add some apple or berries to it.

A great way to feed a hungry crowd for breakfast, this can be made ahead and put in the oven right before your guests arrive. Also great for Potlucks!

    6Slices white bread, crusts removed
    1 lbPork Sausage
    4 CColby Cheese, shredded
4 oz Chopped Green Chilis (small can)
    6eggs
    1 t salt
    1 t dry mustard
    2 CHalf & Half
    Butter or Margarine, softened

1.Lightly butter both side of bread slices and place in 9×13-inch baking dish.
2.In nonstick skillet, over medium-high heat, brown beef sausage; drain well and pat with paper towels. Sprinkle sausage over bread slices.
3.Sprinkle cheese over sausage. Follow with a layer of chopped green chilies.
4.In medium bowl, beat eggs lightly. Add salt, dry mustard and half-and-half. Mix thoroughly. Pour over casserole.
5.Cover with foil and refrigerate overnight.
6.To bake, preheat oven to 350°F and bake casserole 45 minutes, or until bubbly and lightly browned. Allow to stand 15 minutes to set. Cut into squares and serve with picante sauce on the side.
