Not like on a sandwich or anything i mean cheese plain cheese any type but you just went to your fridge and grabbed some mozzarella and munched away?

Is it possible to make cheese from soy milk? If so, does that cheese melt like dairy cheese? & if it is melty, is anyone else creeped out by the fact that soy beans can be processed to the point of meltiness!!!!!?????

The cheese has been in the fridge for a month in air tight bag. It has couple spots of mold. I need cheese & don’t have time to buy a new one should cut the moldy parts & use or not?
Please also tell me how to make cheese live longer in my fridge?

I was eating cheese and crackers and turned my back and when i turned around again my little guy was licking the cheese, will he be ok? I only ask because I know cats are lactose intolerant.
