I've read that most standard U.S. Chinese restaurants are FAR from "authentic" Chinese cuisine. I realize there are different provinces in China w/ particular cuisines, but most American Chinese restaurants offer so-called provincial dishes (e.g. "Hunan Chicken"- Hunan province).

I'm going to a department meeting later this week and we will be having a catered lunch from a local Chinese food place.
