What’s the difference between korma and biryani? Also, what is that savory brown sauce that they put in there with carry out orders?

I’ve made Indian food before, and had it at my neighbors house, and I never got a stomach ache.
The food is good, but I only had the buffet. But the “Cream” indian dishes tend to have a sweet taste. Is restaurant style Indian food usually as heavy as the homemade kind?
