ok. i have a fresh bag of tortilla chips. i would love to eat them with some melted cheese however im not sure exactly how fresh the cheese in the fridge is..it could be maybe a week or more old. theres not mold on it yet but looks like there may be a spec brewing up. since i;ll be microwaving it and heat kills bacteria…can i make chips and cheese with this cheese? thanks

With cheese if you cut a thin layer off the outside then it should be fine to eat the inside. That way any mould that may have started growing will be cut off and you also cut off the dry crusty outside layer that sometimes happens after a while.
Cheese generally lasts at least 2 weeks if you keep it wrapped properly and refridgerate it, should be ok.
