They have green leaves and a purple hue to the vine itself. I am a fulltime sweet potato eater. It is full of necessary nutrients and has been eaten for many centuries before they invented processed foods. Easy to cook within six minutes in the microwave. Better in conventional oven. Have restored my weight and cured diabetes with sweet potatoes within one year. It is the blessed food.

Normally they are green like other plants. There are many cultivars in several shades from almost black to very pale, and a few varigated ones too.

Cultivars sometimes revert (sport) back to the normal color.

And depending on how much sun they get the colors can fade. And fertilizer makes a difference too.

white is the original colour when the plant was first brought to the market place. But then Bio -tech found a way to change things.
