      Heat and mix together a block of cream cheese with a can of Hormel chili. Makes a great chip dip.

      Pour some hot pepper jelly over a block of cream cheese. Makes an awesome cracker dip.

      2 medium size cucumbers
      1 tub whipped cream cheese spread
      shaker of dill weed
      1-2 packets of dry Italian dressing mix
      1 pkg rye or wheat cocktail bread
      Wash cucumbers well. Using a fork, scrape down the cucumbers lengthwise leaving "stripes" all the way around. Slice the cucumbers into 1/4 inch slices or thinner. Set aside.
      In a small bowl, stir together cream cheese and dressing mix; combine well.

      Using a butter knife, spread the mixture onto the individual slices of small cocktail bread (cocktail bread might be found in your deli section rather than the bread aisle, it's just a small and dense miniature version of bread).

      Don't cake the slices with the mixture, just a thin layer concentrated in the middle of the slice.

      Next, lay one slice of cucumber (per slice of bread) in the middle of the bread. Once done, shake a small amount of the dill weed onto the cucumber slice. Remember that dill is strong and a little goes a long way. Just one or two taps of your finger on the shaker should do it per slice.

      The ruffling of the cucumber slices with the fork and the dill garnish really dress up this open faced appetizer. I always get raves about this at parties and requests for it at potlucks.

      Just remember to cover them tightly because the bread will dry and the cucumbers will get wilted if left out too long. It's a good idea to do some preparation work the night before, but leave the slicing of the cucumbers and the assembly of the sandwiches for the last minute.

      my very favorite cream cheese recipe is also the easiest:

      Place a block of cream cheese on a plate.
      Drain a can of crab meat and press into the cream cheese.
      Pour Cocktail sauce over it, allowing just a bit of the white to show on some of the side….

      Serve with crackers.

      I think cream cheese makes great appetizers as well as the traditional desserts. Here a few of my easy favorites:

      1. Mix an 8 oz. block of cream cheese with small jar of sweet jalapeno pepper jelly. Serve as a dip or spread with crackers like Wheat Thins or Triscuits.

      2. Mix an 8 oz. block of cream cheese with a can of green chilies and two or three chopped green onions. Mix in 2 tsp. of garlic powder (more or less to your taste). Spread on flour tortillas. Roll up and slice. Dip in salsa or salsa/ranch dressing mix.

      3. My favorite cheese ball:

      1 8 oz pkg cream cheese
      3 oz. Buddig Beef lunchmeat, diced or shredded
      1 Tbsp. Worchestershire sauce
      1 tsp. Accent salt (garlic powder can substitute in a pinch)
      3 green onions, chopped

      Mix it all together. Form into ball. Chill until firm. Serve with crackers.

      1 tbsp olive oil
      1 onion, finely chopped
      2 cloves garlic, chopped
      300g frozen cooked spinach, thawed
      250g ricotta cheese (or cottage cheese, if preferred)
      1 egg, lightly beaten
      Salt and freshly ground black pepper
      125g dried cannelloni pasta tubes
      550g bottle tomato pasta sauce
      ½ cup cream
      ¼ cup grated fresh parmesan cheese

      1. Heat oil in a pan. Add onion and cook for 5 minutes over a medium heat to soften. Add garlic and cook for 1 minute more. Transfer mixture to a bowl.

      2. Squeeze as much liquid from the spinach as possible. Add
      the spinach, ricotta and beaten egg to the onion mixture and stir to combine. Season with salt and pepper to taste.

      3. Heat oven to 170°C. Spoon prepared mixture into a piping bag fitted with a wide nozzle and pipe into the cannelloni tubes,
      to fill. Place filled cannelloni in a greased oven dish.

      4. Combine the tomato pasta sauce with the cream and pour over the cannelloni. Sprinkle surface with grated parmesan and bake for 30 to 40 minutes or until golden brown and the pasta is tender.

      Piping the mixture into the cannelloni tubes is the easiest way to fill them, but you can push the mixture into the tubes with a teaspoon if necessary.

      Pumpkin and cream cheese ravioli Recipe source:

      Ingredients:
      1 cup pumpkin puree
      2 ounces cream cheese (room temperature)
      1/2 teaspoon cumin
      salt and pepper to taste
      wonton wrappers
      2 tablespoon butter
      a few sage leaves

      Directions:
      1. Mix the pumpkin, cream cheese, cumin, salt and pepper.
      2. Place 1 teaspoon of filling on a wonton wrapper. Wet the outside edge of the wonton wrapper with water. Fold the wonton over and press the edges together firmly to seal.
      3. Boil the ravioli for 2-3 minutes to cook.
      4. Melt the butter in a pan with the sage.
      5. Cook the butter until it browns and remove from heat immediately.
      6. Toss the ravioli and sauce and serve.

      cream cheese and marmalade spirals -
      don't know the source as I have been making it since I was small.

      Combine any cream cheese, Orange Marmalade, sliced green onions, chopped red bell pepper, 1 finely chopped green chilli (you can omit it if you cannot handle chillies) a little salt and pepper. And combine it together. Take a soft tortilla and spread the mixture and quickly roll it and refrigerate it for an hour or so. you can wrap it into a cling film so that it retains its shape. Remove when ready to serve cut it into bit size pieces, say about 1 inch pieces and serve it with your favouite salsa.

      Here's a great dip recipe!!

      1small package of ground hamburger or ground sausage
      1 can of mild or hot tomatoes ( I use Rotel brand with green chillis in it)
      1 package of shredded cheddar cheese
      1 package of softned cream cheese

      Cook your ground meat and drain the grease. Add everything else in a large microwavable safe dish and heat up until melted. Add the meat and stir well. Great with corn chips or tortilla chips!!
