Does anyone know any tasty and simple to make vegetarian recipes?

I’ve been a vegetarian for around 4 months now and the hardest thing is finding good food when my family doesn’t feel like making the extra effort for grabbing some good veggie cuisine. I would like some easy to make and great tasting recipes that you can suggest. If you could post the links to sites or just type recipes below that would be great. Another thing is snacks… if you could recommend some good snacks or staple foods that are healthy, tasty, and easy to make… please let me know. Thank You.
By the way, the only semi-meat things i can eat are fish and eggs. I need to get protein from somewhere so I chose these.

    Pasta Primavera

    3 carrots, peeled and cut into thin strips
    2 medium zucchini or 1 large zucchini, cut into thin strips
    2 yellow squash, cut into thin strips
    1 onion, thinly sliced
    1 yellow bell pepper, cut into thin strips
    1 red bell pepper, cut into thin strips
    1/4 cup olive oil
    Kosher salt and freshly ground black pepper
    1 tablespoon dried Italian seasoning
    1 pound farfalle (bowtie pasta)
    2 Tablespoons minced garlic
    15 cherry tomatoes, halved
    1/2 cup grated Parmesan

    Preheat the oven to 450 degrees F.
    In a very large bowl toss all of the vegetables with the oil, salt, pepper, and dried herbs to coat. Transfer the vegetable mixture to 2 heavy large baking sheets and arrange evenly. Bake until the carrots are tender and the vegetables begin to brown, stirring after the first 10 minutes, about 20 minutes total.
    Meanwhile, cook the pasta in a large pot of boiling salted water until al dente, tender but still firm to the bite, about 8 minutes, or to package directions. Drain, reserving 1 cup of the cooking liquid.
    Toss the pasta with the vegetable mixtures in a large bowl to combine. Toss with the cherry tomatoes and enough reserved cooking liquid to moisten. Season the pasta with salt and pepper, to taste. Sprinkle with the Parmesan and serve immediately.

    youre not a vegetarian if you eat fish, they think and live, so this question is pretty much void. however if you do decide to become a vegetarian i would suggest many brown rice dishes, buy yourself some wheat germ and sprinkle it on a lot of the things you eat. i reccomend oat meal with raw sugar and cinnamon and wheat germ, excellent breakfast and snack, another snack i absolutely swear by is sunflower kernals, just dont eat too much, theyre packed with protein. find the fake meat section of your grocery store, they have chicken and burgers and such, my favorite is fake lunch meat like turkey that contains no meat.
    please dont get caught up in the protein myths, you only need so much a day, and no one ever dies of a protein defeciency. studies show that even vegetarians get more than the daily reccomended amount. good luck, i hope i helped.

    Bean dishes give you good protein. Make sure you get enough vit C and you’ll get plenty of iron too.

    Black beans are my fav!

    1 pound dried black beans
    2 green bell peppers, halved and seeded
    8 cups water
    1 medium onion, quartered
    2 cloves garlic
    1 tsp dried oregano
    1 tsp ground cumin
    1 bay leaf
    salt to taste
    1/4 cup dry white wine
    1 tbsp red wine vinegar
    1 tbsp sugar
    1/4 cup olive oil
    Preparation:

    Soak the bans with one of the green peppers in the water for 8 hours or overnight.
    After soaking, bring the beans, pepper and water to a boil, then immediately turn the heat to a simmer and cook, covered for 1 1/2 hours, or until the beans are almost tender.

    Prepare a sauce, called sofrito, by combining the other green bell pepper, the onion, garlic, oregano, cumin, bay leaf and a little of the cooking water in a blender. Blend on low until the mixture is smooth.

    Add the sofrito to the beans. Bring to a boil again, then immediately reduce the heat to a simmer.

    Add salt and the wine, vinegar, and sugar. Continue to simmer, uncovered, until the bean mixture becomes thick, about 2 more hours.

    Molletes are a delicious Mexican dish made for breakfast, but I enjoy them all the time! Quick, easy, farily healthy.

    Spread an English Muffin with vegetarian refried beans, then top with cheese. Toast/broil til the cheese is melted. Top with salsa or hot sauce. Enjoy. Whole wheat/multigrain English muffins make this healthier and still delicious.

    Since you’re eating the muscle tissue of an animal, fish is not a semi-meat, but meat…this also makes you a pescatarian, not vegetarian. Just a head’s up.

    I love Luna bars as snacks and also keep homemade trail mix in my purse.

    For quick meals, my favorite is to have some pre-baked potatoes around, but I love using hummus as a sandwich spread and loading up a sandwich with various veggies. This is quick, healthy, and always tasty!

    Enjoy the wholesome goodness of my world famous Lemon Rosemary Carrots:

    6-7 wholesome carrots (about one pound)
    2 tablespoon flax oil
    1 1/2 tablespoon lemon juice
    drop of brown rice syrup
    dried rosemary to taste

    Directions:

    Peel and chop wholesome carrots and steam for about 10 minutes until tender-crisp.

    Meanwhile, mix oil, lemon juice, and brown rice syrup in a small cup. When wholesome carrots are done, place in serving dish and mix with lemon juice mixture. Sprinkle with rosemary and serve.
