If I am at someone else’s house for dinner and they serve fried chicken - how bad is it if I remove the skin and breading? How much of the extra fat soaks into the meat?
This is not much of a problem for me because I don’t like chicken skin. But is it still unhealthy this way ?

It’s fine to remove the skin and breading regardless of where you are. It is MUCH healthier that way. If anyone asks, just tell them that the skin and breading gives you an upset stomach, so you only eat the meat.

Sure this is healthier than with the skin, but it is still not good.
It is all about the way it was cooked it is fried nonetheless.
