How can I get rid of a strong wine flavor in my bisque?

November 4th, 2008 · 3 Comments

I decided to make a homemade pumpkin bisque and I thought throwing in some white wine (chardonnay) would give it a sweet flavor. Wrong! The wine tastes so BITTER. How can I fix my bisque? Please & Thank You!!!
so far i've added the following in an attempt to fix the bisque:

1/4 C half and half
1/4C milk
2 T sugar
2 T butter
Ooooh!!! The apple juice worked, AND, it gave it a nice Fall, harvesty flavor that it didn't have before. Bravo!
Nevermind… now it just tastes like bitter wine AND apple juice. Ugh… what a lot of waste. :(

Maybe try adding some cream, heavy whipping cream, to help mild the flavor.

add any form of sugar try apple juice. The wine you want for sweetness is either a cherry or a merlot.

Chardonnay is generally a pretty dry wine. A remedy would be to add a bit of a sweet wine like a sherry or marsala. I don’t know which wine flavor would pair best with it. You can also finish the dish and then dress it with something sweet. One suggestion is a balsamic and maple “reduction.”

“This is basically a reduction of balsamic vinegar and maple syrup. Boil one part of balsamic vinegar and one part of maple syrup until sauce is reduced and becomes thick.”
