In a recipe, it calls for 15 egg whites or two cups. How do I separate the white part from the yellow part?

if u are having too much trouble u can just crack the egg into a flat bottom bowl and scoop out the yolk,, very gently
and then keep the yolks seperate maybe u can use them for somethimg else later. then pour the whites from that bowl to a larger bowl seperatly . repeat this 15 times

I crack the egg with 1 hand and pour it into my hand, let the white drip through my fingers and hold onto the yolk. You don’t risk puncturing the yolk this way and can catch it before it falls into the bowl if you do.

As you crack the shell in half, pour the white in the one half, gently keeping the yellow in the other half.
You can buy an egg seperator from the local supermarket too. this works well.

Crack the egg but keep the yolk in the shell. Then keep pouring the egg into the other egg shell over the bowl until most of the egg white is in the bowl.

If you crack the egg and pull it apart tilt it so that it is up and down. As the yolk is heaver than the white it will tend to sink to the bottom. The white will over flow so if you do this over a cup (recommended so that you can just throw out any white with yolk mixed in) the white will drip into the cup leaving the yolk in the shell.
Hope this helped.

you can toss it between the shells or put it in your hand and let the yolk stay in your palm.

your fingers is good, or a big slotted spoon…
