How far ahead of time can I make my pasta salad to serve to our wedding guest?
I have very limited time and want to make a pasta salad for 100 people. The salad consist of pasta, Italian Dressing, red and green peppers, cucumbers and sunflower seeds. Will the salad be okay if it is made 48 hours ahead of time.

Yep, it'll be okay to make it 48 hour ahead of time. That will be give time to marinate in the dressing and become even more yummy =D

i would do 24 hours ahead of time for fresher taste but it would be ok done in 48 hours.

when I make pasta salad in advance I have noticed that no matter how much dressing or mayo you put on it it becomes dry and nasty when stored.. the pasta seems to suck the moisture up..
my suggestion is to make the pepper and cucumber mixture with the dressing the day before.. but don't mix it with the pasta or sunflower seeds.. cook the pasta the day before but be sure to cook it with a little oil in the water and then rinse well so it doesn't become a big lump of mush.. have someone mix the pasta with the veggies/dressing shortly before serving and add the seeds last..

i say 1 day ahead of time. i made pasta salad on monday night and it tasted great the next day but the dressing made everything limp the 2nd day. especially if your putting seeds in it. you want them to keep their crunch.

Sure it will be okay….I'd suggest leaving out the cucumbers and the seeds and add them before serving. The seeds may get kinda soft after that amount of time and the cucumbers will have lost their crunch factor after 2 days. You could just lay them on top as a garnish before you serve. You may need to add some more dressing before you serve also as the pasta will have absorbed the dressing by this time and the salad will be a bit dry.
