Generally, it takes about 20 minutes (the bottom leaf should come out easily). For larger, tougher ones, it may take up to 40 minutes.

      Until the leaves fall off.

Wash artichokes under cold running water. Cut off stem at base; remove small bottom leaves. If desired, trim tips of leaves and cut off top two inches. Stand artichokes upright in deep, nonreactive saucepan large enough to hold snugly. Add 1 teaspoon salt and two to three inches boiling water. Cover and boil gently 35 to 45 minutes or until base can be pierced easily with a fork. (Add a little more boiling water, if needed.) Turn artichokes upside down to drain. Serve immediately or cool completely; cover and refrigerate to chill. This is four 4 artichokes.

that really depends. Are you eating the leaves or just the hearts? If just the hearts, 20-40 minutes like most people here have said.

If you're eating the leaves, then it takes about 4-6 hours, or about 1/2 hour in a pressure cooker. If you have never had the leaves, you should really try it! Cook it until the meat on the inside of the leaves becomes slightly soft, you want a texture about twice as tough as jello. Throw a few pieces of whole garlic in the pot for flavor, along with some salt. You eat them by holding the tips of the leaves, and scrape the meet with your teeth. You can use mayo to dip the leaves in, or I prefer melted butter with a little lemon juice. A lot of people throw away a great part of an artichoke.
