how long would it take to fully cook chicken legs at 215 degrees?

i'm making some jerk chicken, and i wanted it to be very tender, so i figured i'd cook it at a low temperature. i dont have a meat thermometer, so i was hoping there was some general rule of thumb out there , almost like a chart, stating how long it would take to fully cook chicken based on weight, and temp.

so how long would it take to cook 10 or so chicken legs at 215 degrees, 100 celsius?

      That's too low to cook it safely.

      You could possibly cook it at 150C for around 50-60 minutes, but personally, I'd just cook it for 180C for around 40 minutes. It will not be dry and it will be tender.

      as for a general rule of thumb, there's two you need to worry about when cooking chicken.

      first, it's a meat that's very easy to dry out, so the higher temp you use, the quicker it will be done (allowing it to stay more moist on the inside) but this will typically lead to a slightly crispier skin - temp range for this will be 350-400. if you cook slower, it will be more tender all throughout (to include the skin) but you'll have to baste it, or continually pour its own fluids or another marinade you have over it - good temp range for this will be 250-325.

      rule number two is when chicken is done it's juices are almost completely clear. you don't want to go poking it throughout the whole cooking process b/c that will cause a lot of fluid loss. but after the skin turns completely golden-brown just stick a toothpick through it and take a look at the color.

      I would stick a fork in the chicken, if the juices run clear, its done.
