How to cook Authentic Mexican Food?

I would like to cook my Mexican boyfriend a good authentic mexican meal but I do not know how any suggestions on websites/or tips

      I learned from my ex-husband that they like anything with fresh ingredients. You can make a homemade soup and spice it up with onions, tomatoes, and jalapenos. Have a plate of warm flour tortillas, and he will be good to go.

      OLD EL PASO IS THE LEAST AUTHENTIC THING YOU COULD EVER USE. I GREW UP EATING AUTHENTIC FOOD AND YOU NEED TO USE PINTO BEANS, JALAPENOS, TORTILLAS, TOMATOES, PORK, CHICKEN, BEEF, CILANTRO, LOTS OF CHEESE.

      USE YOUR IMAGINATION AND JUST THROW SOMETHING TOGETHER!!!!!

      Hire an authentic Mexican for a month or two they should be cheap to get.

      Rick Bayless's Mexican Kitchen book has authentic yet easy to make recipes. Another book of his Mexican Everyday is also very good.

      enchiladas
      one can of Chile(el paso brand)
      corn tortillas
      cheese or chicken
      how to make the chile for the enchiladas
      put a little of oil on a pan sprinkle some flour until Gorden grown and pour in the chile until hot
      roll the tortillas with the cheese or chicken in the middle and then pour the chile on top and place in the oven at 300 for about 10 min some lettuce and sour cream on top
