how to make an indian curry?

i love curry’s and would like to make a hot and spicy curry at home. Does anyone have a fool proof recipe for curry like you get at the take away :-)

and tomatoes, when make a curry with chopped tomatoes in i think it tastes awful , very bitter. Is there something i should be adding to take away the bitterness of the tomato

      1) Use canned diced tomatoes and tomato paste, not fresh diced tomatoes.
      2) Add 1 T brown sugar to your curry
      3) There are lots of recipes for curry but the one I usually use is a paste made from:
      1/4 cup water
      1 T turmeric
      1 T cumin
      1 T ground coriander
      1 T Garam Masala (in the spice section)
      1 tsp. ground cardamon
      1 tsp. cayenne pepper
      1/2 tsp. cinnamon
      1/2 tsp. ground ginger
      1/2 tsp. ground clove

      Mix the spices dry, then add 1/2 of that mixture to the water and form a paste.

      (Keep the other 1/2 for later, in a jar.)

      Heat the paste in 2 T canola oil in a skillet for about 1 minute.

      Add in 1 can diced tomatoes, 1 T brown sugar, small can tomato paste and 1 can water or chicken stock. Let simmer for about 20 mintues, stirring often.

      Add in your chicken, tofu, peas, etc.

      In the very end, add in 1/4 cup HEAVY CREAM.

      Serve with rice.
      1/2 tsp. ground clove
