How to make fried mashed potatoes?

I remember as a child my mom plopping left-over mashed potatoes on the skillet and me devouring them quickly. I don’t remember if she added anything to them, but I want to learn how to make them.

      You mix 1 egg, onions, and a little salt and pepper in with the mashed potatoes. Make into a pattie,put a little of oil in the frying pan and fry it (like you would a hamburger).

      Mmmm!!! They are soooo good! I just used refrigerated leftover mashed potatoes. They are easy to shape. Just plop them in a hot skillet with melted butter. You can even season and add fried onion if you want.

      we always took the leftover mashed potatoes and formed them into patties..we floured and peppered them, then we fried them in lots of butter…they were Yummy!

      I remember this! I’ve tried it and can never make it as good as my mum. She put any left over vege’s in as well. I just put a bit of butter and a splash of oil to stop the butter burning. You have to stay with it, let it get a bit crunchy then move it around just repeat that until it’s the way you like it. (It still won’t turn out the way my mum made it. :)) What is it with our mum’s cooking? good luck, my mouth is watering right now!
