If you purely microwave a potato, it is fluffy inside but you do not get any crispiness on the outside. Instead I prefer to microwave the potato to save time but finish it off in the oven - so I get the best of both worlds - speed AND flavour!
Wash and prick the potato and place in the microwave on full power for around 6-7 minutes, depending on its size.
In the meantime, preheat an oven to 200C.
When the potato is finished in the microwave, place on a baking tray, drizzle a little olive oil over the top, sprinkle with sea salt and place in the hot oven for approximately 15 minutes.
Result? A beautifully fluffy jacket potato in the middle but crispy and tasty on the outside too.
as far as the rest to eat right…grab some fresh veggies and fruit…make salads….al good things….dip fresh crunchy veggies in a veggie dip or french onion dip..for good flavor…
i got some canned chicken, drain it well…(for a different flavor instead of using mayo..) i use salad dressing…low cal blue cheese/ranch/ceaser..Your choice…mix well with a bit of pepper…spread on toast and add slice of chedder and lettuce and you have yourself yummy sandwhiches…
i get pretzles or doritos/chocolate teddy grams/etc..( yes kinda junk but flavorful treats) i put a handful in those snack size snack bags and keep them with me..this way you can still have something yummy but in limited quanties…
im out and about alot with my father so i keep a lot of things handy…evencarrots or celery in the snack bags…grab an apple or banna…
oh and i found that yoplait whipped yougurts are pretty good, ive even for a touch of flavor and difference..put a small handfull of my fave cereal in them or some granola..etc…anything to still eat good yet not feel like i am cheating myself out of the things i like.
i know how hard it is to try an take care of yourself and everyone else at the same time. i dont have kids but i do have elderly parents that i do my best to try an help and i used to take care of a disabled women…it was very difficult..being so worried about everyone else we tend to forget about ourselves…that i hve learned is somethign we cannot do….
can try to give you other tips if you want later on…
take care…
