I want to dehydrate cheddar cheese in order to make “instant” cheese sauce mix, but I cannot find any guidelines or recipes to do so. I do find a couple of spots saying it is difficult to dehydrate high-fat foods. Is there any way to get around this? Can anyone advise me how to dehydrate cheese? I am using a big fan-type dehydrator. Thanks
But what would happen if I try it anyways? Would it go rock hard? Spoil? Be inedible once dried?
The reason I am so interested is because I would like to make a quick but preservative free Mac and cheese for my toddler!

No it can't be done at home unless you have very specialized equipment. You can buy cheese powder for this purpose though. I've gotten it before and it's not bad though nothing can replace fresh in my view. You'll have to do a search on cheese powder at the Spices, etc website, they have 6 different kinds.

I think you would find it very difficult to rehydrate it. Why don’t you just make fresh cheese sauce-preservatives are only used because foods NEED to be preserved. Why not preserve fresh sauce instead? Simply make a white sauce with flour, milk and butter and add cheese. Freeze your sauce to preserve it.
