Gelatin is generally made from boiled hooves and bones of animals.

It is not. Gelatin is a protein produced by partial hydrolysis of collagen extracted from the bones, connective tissues, organs, and some intestines of animals such as cows and horses.

Gelatin is not vegetarian. It’s made of ligaments and tendons. Gross!
I wish I had a recipe. I have eaten the packaged vegan marshmallows! They’re good and basically the same as marshmallows with gelatin.
Google ‘vegetarian marshmallow recipe’ and lots will come up! I can’t vouch for any of them.
