u can hand out these italian sausage skewers

8 ounces Italian style poultry sausage*
      8 large basil leaves
      12 pitted calamata olives, halved
      24 grape tomatoes
      24 (6-inch) wooden skewers

Cook the sausage according to the directions on the package and cut it into 1-inch rounds. Cut the basil leaves lengthwise into thirds.
Put an olive half about 1/3 of the way down onto a skewer. Then add 1 strip of basil, folding so it fits nicely on the skewer. Follow with 1 grape tomato and a round of sausage. Position everything on the end of the skewer so the skewer can stand up on its sausage end.

Cook's Note: I used a pre-cooked roasted garlic sausage that just needed to be heated in a skillet for 5 minutes until browned.
I tried to do a version with the baby mozzarella but it would turn out way too caloric.

I recommend lasagna or bolognese. Both are relatively inexpensive to make, plus in both you can 'hide' vegetables in the sauces making them nutritious for children and still nice (No moaning at lumpy green bits!)
If you want an even cheaper option, lemon and mushroom pasta is simple, cheap and vegetarian.

      1 lb ricotta
      2 tsps vanilla
      2 cups flour
      Vegetable oil
      2 eggs
      7 tsps sugar
      2 tsps baking powder
      Dash of salt
      Confectionary Sugar

      Preparation
First combine dry ingredients, which includes flour, sugar, baking powder and salt. Do not add the confectionary sugar. It is used at the end as a topping. Then combine wet ingredients. Combine wet to dry but don't over mix. In a large pot or deep fryer, heat vegetable oil to 340 degrees. Take a tablespoon and scoop out some of the mixture and gently drop in the hot oil. Fry for 4-5 minutes until golden brown. Drain on paper towel then sprinkle confectionary sugar.
