Lets take an example, there are many Japanese restaurant in North America(Canada or USA), however, most sheffs are not Japanese. I am native Japanese man and first time I ate Japanese food in the USA, I was surprised that people consider such a fake and low quality food as Japanese food. Like a sushi or tempra are awful. Do AMerican people know that Japanese food in their place and In Japan are totally different?? Or the taste is not as good as Japense food in Japan becuase, they are cooked for American peopele??

Chinese food in America as is Chop Suey is not the same as China's cuisine. It depends on what is available to eat when cultures immigrate and what they adapt old cooking methods to that create these foods. My husband tells me about Fugu fish and how it is served in Japan as well as Kobe Beef. The seating is different also. You may find places like this in New York somewhere and they would carry a price as they would not be big sellers to everyday people who just want a good meal or lunch.

The best Japanese food I have found is near big Japanese auto plants, like Columbus Ohio.
Most Americans do not know they are getting inferior Japanese food. But twenty years ago you couldn't get it at all, so maybe it will improve.
A frequent problem of Japanese restaurants in America is the portions are too small for Americans. This makes getting enough food expensive.

I agree! I am half Japanese and I loved Japanese food here but, when I went to Japan for the first time the food was great. I went into a little Soba place, with sticky floors in a little street and it was SOOOO good! The one thing I disagree with is that chefs that aren't Japanese don't make good food. I went to a Japanese restraunt in New York and the suhi chef was Mexican and it was really good! Some Japanese fast food that you can get in Japan is better than fancy American restraunts. You should probobly look harder because there are a few really good Japanese restraunts in the U.S.
Edit: One other thing is that it is hard to get good fish and other things here in the U.S.
Edit: Plus half of the ones in America are owned by Koreans

No. Americans probably couldn't point to Japan on a world map, let-alone actually have the slightest clue what genuine Japanese cuisine is like.
Fortunately the rest of the world isn't like that… So don't despair.

I understand how you feel about 'Japanese' restaurant in other countries.
I used to think like you.
I also thought "Sushi Project" by Japanese government was a good idea to let foreign people know REAL Japanese food, though this project were dismissed.
But I realised that same thing happened in Japan.
In Japan, you don't expect to see Italian chefs at an Italian restaurant or French chefs at a French restaurant, do you?
Of cause I'm still not happy to see many foreigners think fake 'Japanese' food is real and pay too much money for it, but I try to see it as 'American Japanese food' or 'Australian Japanese food'…
I don't care that much anymore.
