I want to make sweet potato fries instead of the tradional candied yams for Thanksgiving this year.
I have come up with a coating I would like to use, and will deep fry them. However, when deep frying I usually only leave stuff in for a few minutes… I don’t want the coating to burn. I am trying to figure out what method to use to get crunchy on the outside, tender on the inside fries. Should I
boil for 10min, cool, slice, coat, and fry or
cut, coat, fry, drain, and bake for awhile
or something else?
i am coating them w/ a mixture of flour, brown sugar, cinnamin, and finely chopped almost to a powder almonds. I know the coating will work in the deep fryer, but want the potatoes to be done without burning the coating.

Extra-virgin olive oil, for lightly coating
6 large sweet potatoes, peeled and sliced like steak fries
2 teaspoons kosher salt
1/4 packet taco seasoning mix
Directions
Preheat oven to 425 degrees F.
In a large mixing bowl, drizzle oil over the potatoes and toss to coat. Add salt and taco seasoning mix and toss. Place sweet potato fries in one even layer onto a baking sheet. Keep space between them so they get crispy on all sides. Bake in batches.
Place into the oven for 10 minutes, then flip them over. Place back in for 10 more minutes. They should be soft on the inside and browned on the outside. Let them cool for 5 minutes before serving.
* You may substitute baking potatoes for sweet potatoes. However, when placing back into the oven change cooking time to 5 minutes instead of 10.

peel the potatoes, slice them into fry shape, blanch in low temp oil (240-250) for a few minutes. let em cool off, pat em dry. then fry them in a high temp oil (350-375) till golden brown. then toss them with ur spice mixture right when they come out of the oil. baking them will make them soggy. hope this helps!

T’s Sweet Potato Fries
INGREDIENTS (Nutrition)
* 4 sweet potatoes, cut into large French fries
* 1 tablespoon water
* 2 teaspoons Italian seasoning
* 1/2 teaspoon lemon pepper
* 1 pinch salt and pepper to taste
* 2 tablespoons olive oil
DIRECTIONS
1. Preheat the oven to 400 degrees F (200 degrees C).
2. Place the cut sweet potatoes into a microwave-safe dish with the water. Cook on in the microwave for 5 minutes on full power. Drain off liquid, and toss with Italian seasoning, lemon pepper, salt, pepper, and olive oil. Arrange fries on a baking sheet in a single layer.
3. Bake for 30 minutes, turning once, or until fries are crispy on the outside.

I just cut the potatoes up, toss them in equal parts melted butter and olive oil, and bake. You can sprinkle some fresh basil on them if you would like just before they are done. I serve them with a ranch dipping sauce and get no compliants.

1Peel and slice sweet potatoes as you would for french fries.
2Fry in deep fat as you would french fries.
3Drain on paper towels.
4Salt and enjoy.
