name vegetables that will remain hard/crunchy after slight boil in hot water?

umm… i’m trying to make “crunchy veggie fried rice”, but all i can come up with is carrot -__-… soo if you guys know any, please reply… oh yeah,, i’m trying to get veggies that are common and not that strong in taste (i want to create a refreshing taste)….

    snow peas,
    brocolli,
    carrots,

    kt's answer is accurate.
    But why boil? Steam them in the microwave, then wok-fry.

    Oh yeah, don't leave out the baby corncobs!!

    cauliflower
    snow peas (mange tout)
    lotus roots (if you can find them)
    broccolli
