you’re best off making a slower transition take 2 weeks to cut meat out
get lots of nuts, cheese, milk, (if you do dairy), eggs are great (if you do eggs) and whole grains(bread, pasta, oatmeal)!
vitamin C helps you absorb iron so strawberries or oranges with your breakfast is good, whole grain pasta and tomatos, and lettce is awesome because it’s high in both vitmmin c and iron

I am a big eater too.
In the first few weeks whilst your body is adjusting you may experience hunger pangs but they fade fairly rapidly.
If you start to feel hungry between meals, bananas and raw nibble trail mix are really good fillers.
I detest soy / tofu too.
Fresh Fruit
Fresh Vegetables
Lentils
Sprouted Chickpeas
Raw Nuts
Nut Milks
Seeds
Seaweeds
Pasta
Rice
Beans (Black Eyed, Auki, Kidney, Borlotti, Haricot, Mung, Pinto etc…)
Raw Nibble Trail Mix. You can make your own or buy a pre-mixed one. I make an organic one using almonds, sultanas, pumpkin seeds, cashew nuts, sunflower seeds, wild Persian dried figs and Tibetan Goji berries.
So similar to your current shopping list but without the meat.

So don’t worry about losing your athletic build.

If your really becoming a Vegetarian, and not a Vegan then you don’t have to worry about losing weight. Milk substances are one of the fattiest substances in the world. Vegans are the ones that look deathly skinny, or some do. I’m Vegan, and I’m pretty fricken thin…
Anyways you don’t have to get a shopping list from some random person from Yahoo Answers. It isn’t hard to live a Vegetarian diet, Vegan is another thing but being a Vegetarian still gives you the open option of eating animal excretes and deceased babies (eggs). If your eating the fatty excretes from an animal as well as dead potential animals, liquid meat (eggs), then whats the point of becoming Vegetarian? I know I won’t get Best answer, but I’m not going to lead you into a bunch of bull. Though from my standpoint, if I was just a Vegetarian I would be pretty fat. When you cut out all animals, and animal derivatives from your diet your choices get slim and you will be forced to abandon any extra fat you once had, which isn’t a abd thing if you think about.
