I cook all of the ingredients then set half aside, after the egg is cooked with 1/2 of the ingredients in it, i add the other half in the middle of the eggs. I LOVE potatoes in them.

in a seperate pan, saute your spinach, potatoes onions etc..

in an omelete pan make your omelette, when just about cooked add your hot ingredients, sprinkle with cheese, and fold the omelette over and serve

if you try to warm up the ingredients while cooking the omelet, you will overcook your eggs. a good omelet consists of eggs that have just reached the stage of cooked.

I had a chef instructor once who firmly believed that you should never add anything to the middle of the omelet cause it will always cause the omelet to be less fluffy and will lead to an over cooked product. he suggested concentrating on making a good omelet, then adding the ingredients ontop of the omelet once its plated.

I agree with Cabin Ash only I would cook the potato and onion first since they take longer. Then the pork, and I would do the spinach and cheese last.
