potato harvest?

I live in North Texas. I have planted some potatoes. The plants are turning brown. It is not from lack of water. They have not gone to "seed" yet, I mean send up a flower stalk. When is the proper time for harvest?

      i live here also. i have grown potatos here off and on for years. you need to plant them in dec or jan, as soon as seed potatos are being sold at the nursuries. they should be ready for picking in april or may. the sun is killing them now. its too hot.

      Dig them now. When the tops start dying naturally, the tuber (potato) growth is finished. If you leave them in the ground, they can start what is called "second growth", where the potatoes start sprouting again, the same as if you just planted them. This usually happens after getting a good rain.
      TIP: Let them lay in the field a day or two to let the skins 'harden'. If the sun is extremely hot, let them 'harden' in the shade, in order to not get sunscald.
