potatoes turned black! HELP!?

i peeled a bunch of raw potatoes early this morning to make hash browns.
then i grated them.
they turned kinda red, so that's normal

but by the time i was ready to fry them, they had turned black!
all of it was black! i ended up throwing all of it away because it was gross looking.

was it safe to cook/eat though?
i'm a bit paranoid..

      OMG!!! you threw perfectly good potatoes away!!!!! you could have still used them after putting them in cold water. let me give you a tip.. When peeling potatoes, you want to submerge them in cold water to keep them from oxidizing. they turned black because you let them come in contact with oxygen for too long. you can still used the oxidized potatoes if you put them in cold water. they will turn white again. next time, when you grate the potatoes or cut them or anything of that nature, put the potatoes that you've cut or grated in a bowl of cold water. when ready to use them,strain them and pat them dry. good luck and no more wasting food ok?? ha ha ha ha ha Thanx for the question.       Sorry they were not safe if you would have but something over them then maybe they would have been better but the red is kind of weird too, so maybe the potatos were messed up

      It doesn't mean that they are spoiled. Raw potatoes will always do that, there is a chemical inside of them that turns them black. My kindergarten teacher used them for painting in class. If you are going to peel a potato ahead of time, you will need to parboil it or somehow cook it a bit, so that it does not turn black. For instance, if you peeled and grated them, then put them in the microwave for a minute or so. If you are making potato salad, make sure they are boiled first before you put them in the refrigerator. Or just don't do them ahead of time. Your are right, they look really nasty when they go black.

      Pre-peeled potatoes should be put into cold water until you're ready to cook them. They probably would not have tasted very good, and looked even worse;)

      seem like most all are right
      keep covered in water
      BUT
      if you add some Flavor Fresh or Fruit Fresh to the water
      you will have more time to dry them or set them out
      (it replaces lemon juice) it is ascorbic acid

      If you like good restaurant hash browns, we boil or nuke them, leave in the skin(you can store them in the refrigerator for a couple of days. Be sure to leave them uncovered. You can put a paper towel over them, but don't put them in a pan with a lid or a bowl with press and seal, because they will develop condensation.

      Peel and grate potatoes when ready to use.

      Make sure your pan is hot (we use a cast iron grill). Add oil. When hot, add grated potatoes. Brown on one side (this will be the "pretty" side when you plate them), then brown on the other.

      Done!
