An acquaintance at the gym was talking about this salad but I can't remember what she said she used for dressing. Do you have a good dressing recipe for this?
Thanks!

I don't know what salad you are talking about, but a "poppy seed vinaigrette" would be very nice. I googled a recipe for you:
Vinaigrette
* 1/3 cup sugar
* 3 tablespoons water
* 3 tablespoons fresh lime juice
* 1 teaspoon salt
* 1 teaspoon dry mustard
* 2 tablespoons vegetable oil
* 1 tablespoon poppy seeds
(substituting the lime juice for apple cider vinegar would also be good).

i'd go with a balsmic vingerette, or a raspberry vinegerette. both are really good with the dried cranberries and walnuts.

Try
1 part lemon or lime juice
1 part honey
2 parts oil (walnut is wonderful but even olive oil will work)
Salt and pepper.

a nice balsamic vinaigrette would be very nice……. I'd use have balsamic vinegar and half red wine or apple cider vinegar.
Basic VINAIGRETTE
1½ tablespoons Dijon mustard
¼ cup vinegar of choice
¼ cup good olive oil
3/4 teaspoon kosher salt
½ teaspoon freshly ground black pepper
Whisk together the mustard, vinegar, olive oil, salt, and pepper to make a vinaigrette.

"Everyday Herbed Vinaigrette" Makes 1/3 cup.
Add all ingredients to a small screw cap jar and shake well.
2 tbsp vegetable oil,
2 tbsp lemon juice or vinegar,
(cider vinegar or red wine vinegar is tasty).
1 tbsp water (optional - use for a lighter flavour)
1 garlic clove minced
1 or 2 tsp mustard (Dijon flavour is good)
2 tbsp mixed fresh chopped herbs (or 2 tsp dried)
- basil, parsley, dill etc.
Pinch of salt and pepper

Newman's Own makes a raspberry walnut vinaigrette that is AMAZING, and goes great with the salad you just described! Plus, every penny you spend on the dressing will go to charities to help children in need (terminally ill, etc.)! Good dressing, helps saves lives, what are you waiting for….buy the dressing!
