Does anyone have any suggestions for good, but simple vegan/vegetarian cookbooks?
I have been a vegetarian for some time now, but would like to start cooking for myself so that I am eating more of a variety of fruits, veggies, and whole grains as opposed to processed foods. I don’t know how to cook, so I need a simple, basic guide. I also live in a smaller community so I need a suggestion that does not have recipes that require hard to find ingredients.

I would honestly experiment with free, well-tested recipes posted on websites before investing in a book.

check out the Moosewood restaurant cookbook. it is taken from a co-op in the 70’s from Ithica New york. all vegetarian and mostly vegan.
