I can relate to the way you feel, I hate it when anglos come and tell me how great the Mexican food is, of course they refer to tacos and burritos, and that seems to be their total Mexican culinary experience. Tex Mex is not Mexican, I'm afraid to say, at least I've never had a chili dog or chili con carne in Mexico, but you can get it in the USA, and Mexico is such a big country that there are several regions each with their own cuisine, using the local products, Northern Mexico is all about grilled or charbroiled meat, Central Mexico is about using a lot of corn and beans, the coast does some really interesting things with fish. There is no Mexican Food like the kind you eat in Mexico, or what you can prepare using a Diana Kennedy cookbook. I don't know about Cal Mex, but to a Mexican, anything North of the Border is Tex Mex, Sothwestern, Chicano, Anglo Quasi Mexican or American Standard Stereotype. Real Mexican food, only in Mexico.
Everyone is entitled to their own opinion. Tejanos are not Mexican, if you are born in Texas you are American, not Mexican, and all the Mexican ancestry in the world will make you into one, unless you actually live in Mexico.
