Here are some ideas, I grew up "picnic -ing" with alot of these foods over the years. They can eaten at room temp. or warmed up just before traveling to the picnic site. Snack foods & finger foods are great.
Parathas (stuffed), bhel puri, dhokla, pav bhaji, upma, chaats, pakoras, samosas, naans or methi poori, curried noodles, veg pulao, idli/rava idli, vadai, mango lassi or thandai, tandoori chicken, various kebabs….
I agree with the first 2 but you will need an awfully big basket to carry all those sugessted by "Desi Chef", samosas, even a biriyani, as it may be served cold or rewarmed or even cooked on site, you have to remember all the food safety issues, so it does not end up that the picnic stops at the emergency ward on the way home??
Rice dishes, noodles or pasta salads, curried dishes can be served warm or cold so Aloo Gobi or Dals are fine, if you going to cook things, marinate them and BBQ them on site, even desserts like Kerir, Halwah and Gulab Jaman are fine, just make sure if your serving them cold they stay that way and for hot foods either reheat them or cook them well when at your picnic spot.
I wokred for hotels and in catering operations and did a number of outdoor events and the key is enjoying the day, and not suffering that night, Good Luck and I hope you have fun.
Here are my suggestions: If you intend to BBQ, marinate the chicken kebab, tandoori etc, put them in zip lock bags and then put in an ice box. This can be BBQ at the picnic site.
For rice dishes i would suggest lemon rice, yogurt rice and tamarind rice. The above 3 can be eaten cold(If you wrap them in foil in the form of packets, you can heat them on the grill as well).
Hope you have a great picnic
When i go to Indian resturants, i generally get a curry chicken dish, like chicken masala, they have naan bread which is pita bread, there are samosas which is a cone shape battered piece of potato with some green peas and spices. there is also the tandori chicken which is like a grilled seasoned chicken stick.
if you have never eaten Indian Food. I would recommend those items.
