I bought a can of french onion soup and I was wondering, what kind of cheese do i put in the soup?
also, any recommendations for croutons?
ill be going to the store so im open to all suggestions

fontina cheese is reasonably priced and is really good and traditional on this type of soup. you can really use any kind you want, though.

Gruyère is the traditional cheese to put on French Onion Soup.

okay, forget the croutons and get sliced baguette and brush some olive oil on it and toast it in the oven… mmmmmn
Then as to the cheese, well there's provolone which is one of the most common, and mozzarella works well too. But I love gruyere on mine. It is incredible! Baby swiss would also work, but don't get regular swiss it doesn't have the nuttiness and flavor you're looking for.

mozzarella choice
for croutons…
take some crunchy white bread, like a baguette, toast it and when it comes out rub it with a clove of garlic cut in half…
so gooood!
Put the soup in an oven safe mug, put the freshly toasted/garliced crouton on top, then put the cheese and broil for a few minutes….

Provolone is most common and best but you could always sub with mozzarella or swiss. Put a solid slice (preferably round) right on top and let it melt through seasoned breading of choice and into soup

Mozzarella.
Put a layer of croutons on top of the soup, cover the croutons with the cheese and melt under the broiler until slightly crispy brown.

mozzerella or swiss, if you want to make croutons, just get some slices of bread or french bread, cut them into cubes, spinkle some crushred garlic and melted butter over them,then pop them into the oven for 10 to 15 mins or until cripy, yum yum

Ementaler. It melts best.
Make your own from Rye bread. Large Dice some day old rye, melt butter in a pan. Toss in the butter on medium heat for about 3 minutes. Add garlic powder and parmesan cheese to finish.
These need to be large for onion soup, otherwise, they will get soggy in a hurry.

White cheese is the best.
What we used to do at my mother in laws resturante was this.
Lightly toast some marbled rye then lay a slice of provolone on top of the bread and then lay the toast in a skillet just until the cheese melts, or melt the cheese on a cookie sheet in the oven.
Cut the toast and cut up into about 1/2 in squares. Drop a handful into the soup. Delicious!!! That's my fav way to eat it now.

I like to mix grated Gruyere with a firm sheep's milk cheese and a little fresh white truffle to turn onion soup into something really special. I am eating it right now!
Instead of buying a can just slice 6 onions finely and fry in a little butter and olive oil until nicely brown, add a bottle of your favourite beer, a tablespoon of French mustard, a couple of sprigs of time and a couple of tarragon leaves, pour in a litre of good quality beef stock (store bought is fine) and bring to the boil. Done! Onion soup in 20 minutes.
