They probably just said it because it rhymes and doesn’t have an actual meaning. There are other sayings like “Worry free, chickadee” that would otherwise make no sense if you were to take them literally. People just like to rhyme to try to be cute.

It’s probably a “curry” version of “don’t worry be happy.” Meaning, do not worry, and instead be happy.
“Beef curry” sounds a lot like “be happy,” so that’s where it may have originated from. Just a wild suggestion.
But the meaning is very straight forward, no?
