What is syrup? It’s basically a sweetener like sugar, and water. If you boil it, it ‘thickens’ slightly, but if you boil it for too long, it gets much thicker until it turns hard and ‘cracks.’ If making candy, occasionally you ‘cook to the hard crack stage’ as in brittle (peanut, cashew, orange peel brittles). So don’t ‘over boil’ your syrup.

if you over boil syrup it can get really watery and almost taste like water/pine its really nasty
