you can grill the chicken breasts cut them up and then mix it with lettuce and use the mango salsa like dressing
or grill the chicken and use the mango salsa like a topping

Yum…that sounds good! Pita bread chips would go well w/that. Take some pita bread and cut it like a pizza in 6 or 8 pieces (depending on how big you want your slices to be). You can add cinnamin sugar on the top for a dessert, or for a snack you can put garlic, butter, cheese, the possibilties are endless! Broil in the oven at 360 degrees until the chips are crispy and light brown.

A rice salad with curry powder, mayo, scallions and green beans or peas. Grilled zuchinni and onions.

CHEESY CORN FLAKE POTATOES
1 lg. bag frozen hash browns
1 onion, diced
1 can cream of chicken soup
2 sticks butter, melted
10 oz. sour cream
12 oz. grated cheddar cheese
Corn flakes
Salt & pepper
Put potatoes in the bottom of a 9"x13" pan. Mix onion, soup, 1 stick melted butter, sour cream and cheese. Spread on top of potatoes. Put a layer of corn flakes on top of mixture. Drizzle remaining butter on top. Bake at 350 degrees for 30 minutes.
I usually buy the big turkey roasting pans and double the recipe, that way theres enough for everyone!
May also need to extend cooking time if starting wth frozen hashbrowns.

Baked beans would be good. You can spice them up or make them a little sweeter to go along with the mango salsa. I like to saute onions and add to beans for added flavor, bacon ends sauteed with the onions are really good as well. Add a few tablespoons of steak sauce to the beans is also an option.

how about a leafy salad with a dressing of ranch.. or maybe a simple vinagrette! its simple and easy to make and you can easily carry it with you! you can take the salad leaves in a zip lock bag and carry the dressing separately… just add the dressing to the bag when you want to eat the salad, shake well.. and you salad is ready to eat! This way it'll stay fresh and you dont have to worry about heating it etc.. it is tasty healthy and will completely balance your meal..it will go wonderfully with the chicken and salsa…you can add your favourite vegetables.. i mainly ususally use 2 different types of lettuce (you must add ice lettuce aka. ice berg lettuce) shreaded capsicum, spring onions, basil leaves, cabbage, i also add in bite sized pieces of bread or pine nuts to increse the taste. You can also add little cubes of your fav. cheese ( if you like cheese), i use parmesan.
For the dressing i usually use the ranch or the vinagrette available in the supermarket but you can make it on your own if you wish to.

I was going suggest wild and white rice, and saome veggie of some sort but since you are camping that may not work. Unless you cook it up ahead of time, Put it in a heavy freezer bag and put in gently boiling water, or serve cold. You could also put it in a pouch of tin foil add just a few drops of water or a damp papertowel, seal up and set in the coals.
The best veggie for camping is of corn on the cob, but you could also saute or boil any fave veggies.
If you have a dutch oven you could fry up some potatoes with a little bacon, bell peppers and onions but that doesn't sound like it would go as well with your dinner.
Try a slaw that's not the creamy kind. A really quick one is 1 can garbonzo beans drained, 1 pkg ramen noodles slightly broken up (dry without the flavors), 1 small head of cabbage shredded or sliced super thin (remove and toss the core), itallian dressing. Mix everything together cover and put in the fridge, if you don't want to noodled to be as crunchy then make it up at least 1 day before you plan on eating it or lightly boil the noodles and then drain well and add to the slaw mix.
Or try this Asian Slaw:
1/2 cup seasoned rice wine vinegar
2 tbsp veggie oil
2 tbsp Asain seseme oil
3/4 tsp salt
1 bag (16 oz) shredded carrots
1 lg head savoy cabbage thinly sliced and tough ribs removed (I think you can use reg green cabbage if you can't find savoy)
4 green onions thinly sliced
Prepare viniagerrette by mixing rice wine vinegar, oils and salt in a large bowl. Add veggies and toss well to coat!
