Why do you need to chill french fries before frying them?

yes, i mean soak them in water, but in all the recipes I've read it says to put them in a bowl of cold water and in the fridge for a while. Just wondering for what reason

      Says who? I don't, but I do soak them in water to get the starch off and then dry them thoroughly.

      I don't chill mine, but I do pat them dry so they don't splatter when I put them in the oil.

      I never did that. I just cut them and let them sit on a paper towel until I put them in the oil.
