texas mex keeps it real especialy in El Paso!!!
actually I do know I lived in L.A. for two years then in Baja ca,and by the way in Baja it is bland as well
baja IS mexico,Tex mex was or Estilo Tejano was invented by mexicans native to texas not american gringos,it IS mexiacan food, the only hot mexican food is in Texas,New mexico,Tamalipas,Nuevo Leon,Chihuahua, and Couhila, in Mexico city it is NOT hot in sonora it is NOT hot in ca. and az it is not hot!!
and by the way they do not have Burritos in Mexico,or Texas that is a Californian thing so no there is no such thing as generic Mexican Food it varies from mexican state to Mexican state, and like it or not Texas and Ca are essentially Mexiacan states,so the food in both is mexiican just different

People have different tastes and when they eat the same 'hot' food all the time, it is all they know. Too bad they haven't been introduced to Tex-mex, it is wonderful!

si fool. It's good here in Fort Worth too. It's all about the tex-mex baby.

Because most of the Mexican food in California is made by Mexicans, whereas most of the "Mexican" food in Texas is made by Americans. "TexMex" is an AMERICAN food-style, not a Mexican one!

If you want hot, TexMex-style food in California, go to a TexMex restaurant, not a Mexican one!

You question is a bit like asking why none of the people in Scotland can do "Scottish accents as good as the one Uncle Bob from Boston does", LOL!

PS Maybe you should eat some food in MEXICO, so you're comparing apples with apples? Eating in Texas & Baha will only teach you about the food in, uh, Texas & Baha! LOL…

A good mexican restraunt should have mexicans eatring there. If the place has no Mexicans there either cooking or eating, chnaces are it's lousy.

Proximity to the USA where hot food is not especially appreciated has helped decimate the actual taste of real Mexican food in Mexican towns bordering the USA.

Actually your cuisine is known as Tex-Mex and not really Mexican food; so you do not "keep it real" as you say.

California has some great Mexican food. It just depends upon where you go.

I have lived in both Texas and CA, they both have some good Mexican food. But if you lived in L.A. you would know some good Mexican food. We have it all over the state.
